Intro
This roasted Jersey Royal potato salad celebrates all the fresh flavours that Spring has to offer. Jersey Royals have a delciously sweet and earthy taste and are roasted till golden and crisp on the outside and buttery within. Tossed in a creamy, dairy-free coconut yogurt dressing with mint, parsley, lemon and a dash of wholegrain mustard. Lightly pickled radish and peppery rocket adds a lovely crunch and contrast.
