This mango, black bean and cucumber salad is inspired by one of our favourite cocktails: the mojito. It tastes like sunshine on a plate. Made with sweet mango, earthy black beans, creamy avocado and fresh cucumber, it's spiced with a touch of chilli. The cocktail inspired mint and lime dressing showcases the salad's bright, zesty flavours.
