Tuck into these deliciously fresh Wild Salmon Fishcakes from Sole of Discretion. They’re carefully crafted with wild-caught salmon, organic potato, parsley, egg, polenta, lemon juice and black pepper, for a tasty, filling bite. Each tender cake is completely hand-made in small batches, from mashing the spuds to chopping the herbs, and is filled with Wild Alaskan Sockeye Salmon.

This salmon has a brighter colour and firmer, less oily texture than its farmed alternative, because it’s constantly swimming and migrating over long distances. Each piece is sourced from the frosty waters of Alaska and sustainably caught by family-owned Popsie Fish Company. Everything they catch is static net or line-caught and has an MCS rating of 2.

Sole of Discretion is an initiative that predominantly supports small-scale British fishers who fish ethically, sustainably and responsibly. Their methods have much less impact on the sea bed, using only static nets and hand lines, from smaller boats, and they truly care about the quality of their catch. Sole of Discretion will always agree a payment in advance with their fishers, which means that no matter the market conditions, fishers can always rely on being paid fairly.

Storage & prep

Store below 4°C. Not suitable for home freezing.

Heat some sunflower or rapeseed oil in a non-stock pan on a medium-high heat. Once hot, plop each fish cake in the frying pan and cook on one side for 4 minutes. Turn with a spatula and cook on the other side for a further four minutes. Don't be tempted to move the cakes while cooking as this may result in them breaking up.
