This wild salmon comes from the frosty waters of Alaska, where it’s sustainably fished from right off the beach by the folks at the family-owned Popsie Fish. It has a less oily texture than farmed salmon, since it’s constantly swimming and migrating over long distances, which makes its meat brilliantly firm. You’ll find its deep, rich orange colour is quite different to farmed salmon too, as the salmon feeds on the shrimp it shares the open water with. Cook it slightly pink, that way you’ll experience its already amazing flavour and texture in all its splendour. This wild salmon is static net or line-caught and has an MCS rating of 2.

A little note: We’ll be getting wild salmon in on just Fridays and Tuesdays, with a 7 day shelf-life. Wednesday customers will therefore get a minimum of 2 days shelf-life, as opposed to the usual 3. All other customers will get the 3 days of shelf-life. The fishery is highly regulated and this salmon is harvested once a year during a very short season. It is brought ashore and frozen incredibly quickly to ensure the quality is preserved.

Storage & prep

Store below 4C. For best results, preheat the oven to 170C. Drizze with olive oil, season with salt & pepper and place in an oven proof dish. Cover with foil and bake for 15-18 min. the center is best left just a little bit pink. Alternatively, grill on a medium heat for 5-7 min. The salmon will have been previously frozen during processing in Alaska, and shipped to Europe in freezer sea containers. Not suitable for home freezing.
