Grown in north-western Italy’s Piemonte region, this short-grain Selnio rice has all the sweet, sticky characteristics of the Japonica variety used in Japan. Once harvested, it’s then milled to perfection in the nearby town of Trino, exposing the starchy, white inner grain that holds its shape perfectly when rolled.

Storage & prep

Store in a cool, dry place.

Wash 1 cup (190g) of Sushi Rice in cold water and drain. Transfer to a saucepan with 1 1/4 cups (300ml) of cold water. Leave to soak for 30 mins. Bring to the boil. Cover and lower the heat to simmer for 10-12 minutes or until all the water has been absorbed.
