This particular organic ham from Daylesford is a very unique variety indeed. Made using a special recipe of stout, molasses and juniper brine, that the ham is soaked in for up to fifty days, it's then cold smoked over oak for 12 hours. All of this gives the ham an exciting depth, richness and complexity of flavour.

Daylesford hams are all made by hand in the new Daylesford Smokehouse situated on the farm. The ham is made in small batches using traditional methods, curing salts, whole spices and herbs and there's plenty of time dedicated to the curing and maturing process, allowing the flavours to develop fully. The ham is made from legs of female pigs (called gilts), the traditional way with the fat intact, giving the ham exceptional taste and moistness.
