Producer
Founded in 1994 by Alistair Blair, The Fish Society is committed to delivering only the finest quality fish and seafood. To capture peak flavour, certain catches are frozen very soon after landing, while others are kept carefully chilled up until delivery. Whether the catch was previously frozen or kept chilled, everything we sell from them arrives defrosted and ready to cook. Plus, each product is sourced responsibly, with help from experts such as the Marine Conservation Society.

Storage & prep
Keep refrigerated, once opened, consume within 24 hours. Previously frozen. Not suitable for home freezing.
Pan Fry – Recommended Pat the cod dry with kitchen paper. Season lightly with salt and pepper. Add a little oil or a knob of butter to a non-stick pan and warm over medium heat until hot but not smoking. Place the fillets in the pan and cook for 3–4 minutes per side. Avoid moving them too much so they colour lightly. The cod is ready when the flesh turns opaque, flakes easily, and is just firm to the touch. Ideal with a squeeze of lemon or a simple herb butter.
