We’re not ones to brag but we’d like to show off our mussels. These rope-grown mussels are farmed at Fowey Shellfish in Cornwall, the UK’s first ever offshore organic mussel farm making for a sustainable and highly traceable origin. Farming like this means meaty, nutrient-rich mussels that are grit-free, live-packed and sitting in glossy black shells. Settle these into a seafood sauce or pair perfectly with chips for some moules-frites.
With organic mussel farming, it’s all about windspeed. If there’s a north or westerly wind and good windspeed, then conditions are ideal for harvesting juicy organic mussels. However, an easterly or southerly wind or strong windspeed of 30-40 means that Fowey’s flat-bottomed mussel boats can’t work safely. Unlike non-organic or wild mussels, which are grown on beaches where the sand makes them quite gritty, Fowey’s mussels are farmed offshore in St. Austell bay. So you’re guaranteed bigger, meatier and all-round superior shellfish that are free from grit.

Fowey Shellfish are proof that organic innovation combines natural resources and flavours with new ideas and new technologies. Admittedly, rope might not be considered a new technology in most fields but for mussels it’s revolutionary! They were the first offshore mussel farm to grow along ropes and have been doing so since 1995. As of 2018 they were certified organic and even the ropes themselves changed to organic cotton. The mussels themselves are sourced-from, grown and harvested all from the same coast. This means that Fowey have a highly traceable and sustainable port to plate process. Their offshore ropes let them farm far from coastal pollutants and off the seabed growing bigger, more plentiful mussels in purer waters out to sea, rather than at the bottom of it.

Storage & prep
These mussels are packed and delivered live for freshness and should be kept chilled in the fridge between 2-4 degrees to keep at their best. Use as soon as the pack is opened to keep them live and fresh for cooking. Before cooking, check they’re alive by giving them a tap and checking they close up. Discard any that don’t close and discard ones that don’t open during cooking.
