On Sharpham Park, rolling fields of spelt act as a natural haven for wildlife. Bees, hares and ladybirds all find shelter and room to forage amongst this ancient grain. This Organic Pearled Spelt is produced by bouncing it over rotating stones. The bouncy technique (ok, we don’t know if that’s the technical term!) removes the outer layer of bran and ‘pearls’ the grain. So when you pop it in casseroles or soups, it soaks up all of the flavours. And, since the grain is a good source of protein, it makes an excellent substitute for rice.

Sharpham Park is a 300-acre historic park that dates all the way back to the Bronze Age. Neighbouring Glastonbury, its rolling fields of organic spelt and over 300 walnut trees are a natural haven for local wildlife all year round. Using only traditional milling methods, we can’t think of a more fitting maker of this ancient grain.
