Organic Yacon, otherwise known as, 'ground pear', 'sun carrot', or 'apple of the earth', was a favourite of the ancient Incas, because of its subtly sweet flavour and brilliant crispness. It can be eaten raw, but is also lovely in soups or chopped into a salad. It can even be used as a substitute for apples in apple pies.

Wiel van de Bool has cultivated yacon for years, and it's not easy work. The tuber has to be harvested by hand, due to its fragility, with any mechanical harvesting most probably causing it to break and crack. Wiel is a staunch advocate of yacon's health benefits, and is dedicated to getting this ancient wonder into as many hands as he can.
