Complete with the DOP seal of authenticity, this is an award-winning, traditional and organic Manchego Curado. The Fuentillezjos estate’s premium sheeps’ cheese will delight your senses with a sweet, buttery aroma and well-rounded savouriness, finishing with roasted hazelnut notes. A full eight months of curing is what transforms this cheese from good to truly great.

For a cheese so refined we described it like a fine wine, we recommend pairing it with a medium bodied red like Tempranillo. Best enjoyed after at least an hour at room temperature.

Located on the slopes of La Posadilla, a volcano in the Campo de Calatrava, Finca Fuentillezjos are sheep breeders first and foremost. They boast two generations and half a century of experience in rearing the famous Manchega sheep, with the utmost respect for nature, biodiversity and the culture of Spain, and have collected a herd of awards for their efforts.

Storage & prep

Keep refrigerated below 8C. Once opened, keep refrigerated and consume within 5 days.
To enjoy the fullest flavour, remove from the packet, cover lightly and bring to room temperature half an hour before serving.
