With a mild, caramel-like taste and a semi-hard, moist texture, this is organic Manchego made to rigorous DOP authenticity standards. Produced using Manchega sheeps’ milk and traditional rennet, this semi-cured delight is the Meryl Streep of cheese. Winner of the Cofradia Queso Manchego 2011 and the Gran Selección, Best Organic Cheese in Castilla La Mancha 2008 and 2010 to 2013.

Best enjoyed after half an hour out of the fridge with a glass of light red wine.

Producer

Located on the slopes of La Posadilla, a volcano in the Campo de Calatrava, Finca Fuentillezjos are sheep breeders first and foremost. They boast two generations and half a century of experience in rearing the famous Manchega sheep, with the utmost respect for nature, biodiversity and the culture of Spain, and have collected a herd of awards for their efforts.
