This organic ham from Daylesford is brined in Chris' (the Daylesford resident charcutier) special recipe, and it's then soaked in elderflower syrup, to give it a lovely sweet fragrance and tinge. But that's not all. It's then cooked with zesty orange slices, which complement the fragrant elderflower ever so harmoniously, and give this ham a really unique flavour. It's truly in a class of its own. Your soft-bread, crisp cucumber sandwiches will never be the same again.

Daylesford hams are all made by hand in the new Daylesford Smokehouse situated on the farm. The ham is made in small batches using traditional methods, curing salts, whole spices and herbs and there's plenty of time dedicated to the curing and maturing process, allowing the flavours to develop fully. The ham is made from legs of female pigs (called gilts), the traditional way with the fat intact, giving the ham exceptional taste and moistness.
