Organic new potatoes with their thin, flaky skins and waxy, firm texture make a perfect summer potato salad. Scrub gently and boil, then once cooked coat with a mix of olive oil, a little lemon juice, crushed garlic, salt and pepper. Then, scatter finely chopped dill, parsley and chives over the top – this goes down a storm at our office lunch club!

These new potatoes are from the Foskett's Farm. They've been farming at Low Farm in Suffolk since 1955, and organic since 2009. James looks after the farm now, with his wife Belinda, and their Labrador, Dizzy. James encourages wildlife throughout the farm: kingfishers, barn owls, oyster catchers and water voles are some of the more unusual animals he’s spotted.

Do not peel new potatoes. Simply rub any flaky skin gently from the surface. Always put new potatoes into boiling water to seal in the flavour. Adding salt to the water is a matter of personal preference. Our new potatoes should be stored in a cool dry place away from direct sunlight. They are suitable for home freezing.
