Paul Hartland and his girlfriend Carol Smith of Kite Wholefoods produce this delicious mayonnaise from their tiny Usk Valley premises in the lush heartland of Wales. They are passionate about good ingredients and only use the finest organic free range eggs, cider vinegar and sunflower oil, squeezing the lemons by hand and freshly grinding the pepper. They never add sugar or artificial ingredients. Each batch has its own unique flavour, consistency and colour, depending on the season and – perhaps – the mood of the hen!
