Organic Maftoul is a special sort of couscous, nuttier and firmer in texture than most grains but still hearty and light. Its name means hand rolled and Zaytoun’s approach to this traditional Palestinian grain certainly pays homage to the name. Even to this day, the bulgur and whole wheat flour is rolled and dried by hand out under the baking heat of the Middle Eastern sun. Create a stunning side with some simple spices and seasoning or mix your Maftoul up with sautéed veggies for a filling main, full of earthy flavour.

Storage & prep

Store in a cool, dry place. To prepare, rinse contents of pack in cold water. Steam for 20 minutes OR add 350ml of stock or water, bring to the boil and simmer for 12-15 minutes.
