Ling is a firm, white fish with a taste that’ll be familiar to any chip-shop aficionados. That makes it a great alternative to cod in recipes which call for it too. And, just like our cod, this ling is caught by day boats off the south coast, which means it’s as sustainable as it gets and not susceptible to overfishing.

Storage & prep

Store below 4C. Not suitable for home freezing (sometimes the fish will have been previously frozen)..

Preheat the oven to 190C / Gas 5. Wrap the fish in a foil parcel with a knob of butter and a squeeze of lemon. Bake for 12-15 minutes, until cooked through.
