Sizzle up our organic Lamb and Mint Sausages from The Green Butcher for a fresh twist on sausage and mash. They're made with organic, 100% pasture-fed lamb, seasoned with mint, garlic, and rosemary for a bright, herby lift.
What makes me special?
- Lamb and mint. Fresh mint cuts through the rich, savoury lamb for a classic pairing. Garlic and rosemary add a gentle, aromatic depth.
- A tangy note. A splash of balsamic and red wine vinegar brings a subtle tang to the mix. It balances the richness of the lamb beautifully.
- Deeply savoury. The lamb has a full, rounded flavour and a rich, savoury depth. It's a lovely change from your usual pork sausages.
- Pan fry or roast. Cook them in a pan or roast them in the oven, turning now and then, until they're cooked all the way through. They'll take on a lovely golden colour as they go.
- So many ways to serve. They're lovely with buttery mash and minted peas, or tucked into warm flatbreads with a spoonful of yoghurt. Try them with roasted root veg too.
- Freezer friendly. They're suitable for home freezing, so you can keep a pack on hand for a quick dinner. Pop them in the freezer on the day they arrive.
- 100% pasture fed. The lamb comes from sheep raised on grass and pasture, and it's certified organic.
- Zero air miles. Like everything we sell, they're never air freighted.

The Green Butcher is a small, Twickenham-based cooperative, co-owned by Nick Green and the pioneering organic, British dairy farm, Horton House Farm on the Wiltshire-Somerset border.
