A local version of the Greek favourite, halloumi. It's made from 100% pure sheep's milk, giving it a brilliant whiteness. A soft, salty cheese with hints of fresh mint, as halloumi is wrapped in the stuff to keep it fresh. This cheese doesn’t melt so whack it on a barbecue for a soft centre and crispy outside.
