High Weald Dairy is a family-run business based at Tremains Farm in West Sussex in the beautiful Ashdown Forest, owned by Mark and Sarah Hardy. They make organic sheep and cows' milk cheeses, and have won a shelf or two of awards over the last few years. They’ve gained eco points by installing a new boiler that’s only fed on locally sourced wood, only needing ten logs per day.
