This gives the cheese its delightfully creamy texture and light, buttery taste. Welfare is a top priority at Lye Cross, and they make sure that their herds lead happy, peaceful lives. Their cows are free to roam on natural pastures, and enjoy a diet consisting entirely of grass and forage, with no artificial fertilisers or pesticides in sight.

Lye Cross Farm is owned by the Alvis family, who have fifty years of cheese making experience. It is based at the foot of the Mendip hills, in Somerset, and only a few miles from the village of Cheddar. All the gorgeous flowers and rich grasses make for the tastiest milk, which they employ, using old-fashioned cheese-making skills, to make these fantastic cheeses.
