This is a traditional ham but done the Daylesford way. After the ham has brined, Chris, the resident Daylesford charcutier, reduces down the rest of the stock to a rich jelly, which is then poured over the ham, keeping it beautifully moist and adding even more flavour than there already is. These slices are perfect for lunches with cheese, chutneys and fresh apple slices. Your Ploughman's has just been taken to a whole new level.

Daylesford hams are all made by hand in the new Daylesford Smokehouse situated on the farm. The ham is made in small batches using traditional methods, curing salts, whole spices and herbs and there's plenty of time dedicated to the curing and maturing process, allowing the flavours to develop fully. The ham is made from legs of female pigs (called gilts), the traditional way with the fat intact, giving the ham exceptional taste and moistness.
