Our Dover sole fillets come by way of Celtic Coast Fish Company, who source fish with sustainability and freshness in mind. Regarded as a king among fishes, Dover sole is brilliantly meaty, with a delicate, slightly sweet flavour. This flavour has inspired many a classic French dish – Sole Véronique and Sole à la meunière to name just two. It’s best not to overthink things when cooking this superb fish – simply let its natural, elegant character shine. Grill, pan-fry or poach it, and partner with flavoured butters – some garlic butter, perhaps – or simple sauces. Our Dover sole is either Gill netted or Otter trawled from Cornwall, the Western Channel or the North Sea. It has an MCS rating of 2.
