Collard greens are a fantastic crop that just keeps giving. Our grower Andy tells us all about them "We will pick leaves through to the first half of winter and at some point we'll have the heads too. Think of a giant Brussels sprouts top with lovely blanched inner leaves. After that, we'll have a crop of the sweetest broccoli spears, from the same plants, in March and April". With dark green, fan-like leaves they're delicious steamed, simmered or braised. Just strip the leaves off the central rib before you get cracking. They have a naturally waxy coating which means they don't need to be packed in a plastic bag, yours will arrive rolled up like a cigar!
