Versatile and firm, sustainably sourced cod cheeks are a great example of cutting down on waste by utilising the whole fish. What are cod cheeks? They’re carefully cut from the jaws of the fish and are considered a chef’s favourite. Cod cheeks are known for their delicate, sweet flavour and have a meaty texture not unlike scallops. Ours have been masterfully prepared by the Celtic Coast Fish Company, and are boneless and skinless – perfect for stir-fries and Thai-style curries. Our cod comes from the Icelandic and Norwegian seas, and is caught by longline, gill net or demersal otter trawl. The MSC rating is 1/2.Caution: Although every care has been taken to remove bones, some may remain.
