In the village of Geifertshofen in Germany’s Hohenlohe region, Dorfkäserei crafts traditional cheeses from organic hay milk supplied by 12 family-run farms nearby. The dairy focuses on simple, time-honoured cheesemaking, turning fresh hay milk into characterful cheeses that let the quality of the milk shine through. Every cheese is made using just a handful of ingredients: fresh hay milk, cultures, salt and rennet. The result is a range of naturally made cheeses with plenty of depth and flavour, created by people who are passionate about keeping regional cheesemaking traditions alive.
