Storage & prep
Store between 0c & 4c. Suitable for home freezing. Freeze on day of delivery. Fully defrost in a refrigerated environment over 24 hours. Once fully defrosted, use within 24 hours. Do not re-freeze.
To cook: 1. Pre heat your oven to 160°C /140°C fan/gas 3. 2. Remove mince from packaging. 3. Season with sea salt & cracked black pepper, then sear in a little beef dripping or rapeseed oil in a casserole dish over high heat until brown. Drain away any excess fat then add a splash of Worcester sauce, a tablespoon of red wine or sherry vinegar then add 350 ml of chicken or beef stock and 1 tablespoon tomato paste (optional). Thicken with a tablespoon of corn flour mixed with a little cold water and stir into the simmering broth. 4. Cover the dish and place in the centre of the oven, cooking for 45 minutes. 5. Meanwhile dice equal amounts of onion, carrot and celery and soften in a separate pan with a little butter for 4 to 5 minutes. Add to the mince & simmer for a further 15 minutes. 6. Remove from oven & serve straight away.
Serve with Yorkshire puddings and seasonal vegetables.
