It’s the season of organic squash, full of colour and flavour. Each week we’ll pick the best medium sized squash for you to chop and roast, or do whatever you may. These will include Harlequin, Onion, Celebration and some of our other favourites.

Clive grows a bigillion (oh fine, 14) types of squash on his fenland farm, Holm Select in East Anglia. "Holm is ancient dialect for Fenland Island, which we are – an island of organic amongst all this conventional farmland." Although the farm's actually below sea level, so would be more of an underwater island.

Storage & prep

To prepare simply cut into chunks and cook as desired. The skin does not need to be removed for most squashes although this is down to preference! It is best used as an ingredient in soup or roasted and seasoned along with other vegetables. Squash should be stored in a cool dry place.
