This delectable treasure comes from the Montanari & Gruzza organic dairy, high in the hills that overlook Parma, in Northern Italy. Their cow herds graze on natural grasses all year long, producing an organic milk that subtly reflects the pastures and wildflowers that grow in each season. Even after a 30-month aging process, this hard cheese still retains a strong, grassy aroma with a sweet, milky taste. Sprinkle over pasta dishes, enjoy as an aperitif, or even with a little sweet balsamic vinegar after dinner.

It all started when Stefano’s parents and their 225-tree olive grove in Alghero, North West Sardinia, an area renowned for the fantastic quality of its olive oil. These days, Stefano and his team are our go-to guys for traditional, Italian, organic food. And we’re not their only fans. They started selling their organic produce (including fresh pasta, piadinas and Italian cheeses) on the streets of dear old London: the markets of Spitalfields, Portobello and foodie-fave Borough have long been a-buzz with these incredible Italian imports.
