Slice off a piece of this organic Gouda from our friends at Connage Highland Dairy.
They craft their delicious, high-welfare cheeses with milk from their organic dairy herd of Holstein Friesian cows, Jersey crosses and Norwegian Reds. Their cows snack on luscious clover pastures along the shores of the Moray Firth all day.

This waxed cheese matures from a sweet, mild flavour to a firmer texture with tangy, nutty, floral notes. Suitable for slicing into sandwiches, grating over your bakes or serving as part of a cheese board, it pairs well with beer and dessert wine alike.

Originating in Holland as far back as 1184, Gouda is named not for the city in which it was first made, but for the city which became famous for trading it, with their weekly cheese market becoming an early tourist attraction.

In the village of Ardersier you’ll find the family-owned and fully organic Connage Highland Dairy. Started by father Hamish Clark, Connage is now run by brothers Callum and Cameron, with their wives Jill and Eileen. Their organic dairy herd of 150 cows, mostly Holstein Friesian with Jersey crosses and Norwegian Reds, graze the luscious clover pastures around the dairy and along the shores of the Moray Firth. They’re proud to grow their own feed and have always made animal welfare their top priority, all while providing jobs for the local community.
