Long passed over by commercial farming, Farro is considered the oldest variety of cultivated wheat. Rustichella d’Abruzzo recognise the health benefits of wholegrains however, and hope to bring this ancient crop back into vogue using traditional methods. Their Farro Spaghetti is a rustic, hearty and wholesome option for budding Italian chefs, perfectly partnered with Arrabbiata-style sauces and other delicate flavours.

Rustichella d’Abruzzo only use the very best semolina from selected, organic durum wheat. This flour, with a high gluten content, is mixed with pure mountain water to give a unique firmness and flavour to their traditional pasta. Their respect for the old-fashioned way of doing things means they can offer a hearty Italian pasta that’s convenient, yet as traditional as you can get without making it yourself.

Storage & prep

Store in a cool and dry place away from light and direct heat. Cook for 9-11 minutes in boiling water, add a little salt if you wish. Drain to serve.
