Make midweek lunches more exciting with this delicious, vegan Porcini Mushroom & Spinach Quiche from our friends at Higgidy. Made with seeded spelt shortcrust pastry with white, chestnut and porcini mushrooms, spinach, and a hint of garlic and lemon in a creamy oat and coconut filling. Each one is then hand-topped with a crispy kale crumb for added crunch and texture. This single-serving quiche can be enjoyed straight from the fridge or heated up in the oven for 17 minutes at 180°C.

Storage & prep

Keep refrigerated below 5°C. Enjoy hot or cold.

To heat: Preheat oven to 200°C/180°C Fan/Gas Mark 6.
Remove all packaging.
Place on a baking tray and heat for approximately 17 minutes.
Do not reheat.
