Rustichella d’Abruzzo only use the very best semolina from selected, organic durum wheat. This flour, with a high gluten content, is mixed with pure mountain water to give a unique firmness and flavour to their traditional pasta. Their respect for the old-fashioned way of doing things means they can offer a hearty Italian pasta that’s convenient, yet as traditional as you can get without making it yourself.

Store in a cool and dry place away from light and direct heat. In a pot pour 150g couc cous and 1 tablespoon olive oil, add 150ml broth/hot water and mix. Cover and let the liquid absorb. Once absorbed separate cous cous with a fork. Let rest for 5 minutes and season if desired.
