Carrick is a traditional farmhouse cheese with a deep, nutty flavour and rich aroma. It’s a firm, organic, cows' cheese with a creamy finish that dries naturally with age. It’s made by hand using vegetarian rennet by the Ethical Dairy in Scotland, and their pioneering, animal welfare-first approach means that it’ll take pride of place on your cheeseboard.

Producer
Set up in direct opposition to the intensification of dairy farming, The Ethical Dairy at Rainton Farm in south-west Scotland are makers of world-class organic cheeses with a welfare-first approach. Keeping their dairy calves with their mothers for far longer than conventional wisdom dictates allows them to suckle and wean naturally, reducing the stress on both mother and child alike. To them, it’s simple. They don’t want to have to choose between doing what’s right and staying in business – and that makes them the perfect fit for us too.
