Ivor and Susie Dunkerton have been producing delicious cider since 1979, and then they were the first cider makers in Herefordshire to convert to organic methods in 1988. They grow old varieties of cider apples such as Sweet Coppin, Dabinett, Stoke Red and Foxwhelp. After pressing the apples, they ferment and store the juices separately for one year before blending them together. They take their time over the blending process, which requires immense skill to keep the cider in peak condition.
