This one pan, Indian-inspired midweek roast is a delicious way to pack flavour – and veg – into your dinner. Coating the chicken in a simple marinade is an easy way to add spice. Roasting the chicken with veg means you don't have to cook seperate sides to go with your meal. We've used red pepper, courgette and red onion but you can vary the veg to suit the seasons and your veg box. Serve with rice, naans or roti on the side.
