Go Greek with your veggies this week. Chop Mediterranean veg, like courgettes, aubergines, red onions and tomatoes. Tumble them into a baking dish with chopped new potatoes. Add garlic, thyme or oregano and plenty of salt, pepper and olive oil. Roast for 30-40 mins till tender.
