- 1 mango
- A handful of mint, leaves only
- 100g baby leaf spinach
Peel the mango and slice away the flesh from the stone. Pop the flesh into a blender with the mint leaves and baby leaf spinach. Whizz with a cupful of ice or iced water. Blend till smooth.
If your mango is a little firm when you unpack your box, pop it in a paper bag with one of the bananas from the box. The banana will help ripen up the mango.
