- 100g kale
- ½ cucumber
- 1 banana
- 20g oats
- 250ml coconut drink
- A handful of ice cubes

Slice the leaves off the pineapple and halve it (see our tip below). Slice the skin off 1 half, and use the tip of your knife to scoop out any tough ‘eyes’ left behind in the pineapple. Roughly chop the pineapple flesh, discarding any woody bits of core. Add the pineapple to your blender.

Peel the beetroot, chop it and add it to the blender (see our note about beetroot). Slice 1cm of the thumb of ginger. Add it to the blender. Pour in the almond drink and add a handful of ice cubes. Blend till smooth, pour into 2 glasses and serve.

Extra, extra
If you have a large blender you can use all the cucumber, although this well affect the nutritional information. Alternatively, it will keep well in the fridge for a couple of days. Perfect for sandwiches and salads. - Tip
