- 1 courgette
- A handful of mint, leaves only
- 2 apples
- 100g baby leaf spinach
- 1 lime
- 250ml water
- A cupful of ice
Trim and coarsely grate the courgette. Quarter the apples, slice out their cores and chop them into small chunks. Zest the lime. Carve away the white pith and chop the lime flesh.
Place everything in a blender with the mint leaves and baby leaf spinach, 250ml water and a cupful of ice. Whizz till smooth.
