Ingredients you'll need
- 3 red peppers
- 1½kg potatoes
- 375g cherry tomatoes
- 600g golden baby beets

Toss sliced red peppers with a couple of chopped garlic cloves, a spoonful of olive oil, salt and pepper and fry in a hot pan till tender and lightly charred. Drizzle over a little vinegar and scatter with chopped parsley to serve.

Roast baby beetroot make an easy and delicious side dish. No need to peel. Just give them a good scrub then toss with olive oil, salt, pepper and a little chopped rosemary. Roast in a hot oven for 30-40 mins till they're tender when pressed with a fork.
