Prep: 10 mins
There are so many flavours to be found in an English summer garden, we’re not sure we could count them all – that said, we’ve done our best to fit as many of them in a blender as we can: we managed cucumbers, apple, raspberries and mint, plus a trickle of hazelnuit drink for gluggability.

Ingredients you'll need
  • 1 short cucumber
  • 2 apples
  • 125g raspberries
  • ½ x 100g baby leaf spinach
  • A handful of mint, leaves only
  • 330ml hazelnut drink
From your kitchen
  • A few ice cubes
Step by step this way
  • 1.

Peel and roughly chop the cucumber (the skin can be bitter on short cucumbers so it’s best to peel them) and add it to your blender. Quarter the apples and slice out the cores and pips. Roughly chop the apples and add to the blender.

  • 2.

Tip in the raspberries. Add half the spinach leaves to the blender (keep the rest for your Rhubarb Pie Smoothie) and add the mint leaves. Pour in 330ml of the hazelnut drink and add a few ice cubes, then blitz for 1-2 mins till well combined. Serve straight away.
