The fresh flavours of summer come together in this mix of sunny-sweet strawberries, earthy spinach, the creaminess of courgette with a hint of toffee from sticky Medjool dates.

Ingredients you'll need
  • 1 courgette
  • 225g strawberries
  • 2 Medjool dates
  • 50g baby leaf spinach
From your kitchen
  • 250ml cold water
  • A few ice cubes
Step by step this way
  • 1.

    Trim the ends off the courgette and slice it. Pop it into your blender. Hull the strawberries and add them to the blender. Halve the dates and scoop out their stones. Roughly chop the dates and add them to the blender. Tuck the baby leaf spinach in around the fruit and veg.

    Pour in 250ml cold water and add a few ice cubes. Blitz till smooth. Serve straight away.
