Halve the avocado and scoop out the stone. Pop the avocado flesh into your bender. Roughly chop the kale leaves and dried apricots and add them to the blender.
Zest the lime into the blender, then halve the lime and squeeze in the juice from 1 half. Shake in the hemp seeds.
Pour in 330ml tiger nut drink (save the rest of the carton for this week’s other smoothies). Add a handful of ice cubes and blitz till creamy and green. Taste and add a squeeze more lime juice if you think it needs it. Pour the smoothie into 2 glasses and serve.
