Carrot Patch Pick-Me-Up

This creamy veggie thick shake is a smoothie we think the Easter Bunny would approve of. Packed with sweet carrots and velvety bananas, plus a peppery kick of ginger and spice, it’s like a slice of carrot cake in a glass. Sound good? Well, hop to it!

Ingredients you'll need
  • 2 carrots
  • 2 bananas
  • 2cm slice of ginger
  • 35g cashews
  • 1½ tsp mixed spice
  • 330ml oat drink

Step by step this way

    Scrub the carrots and trim them. Roughly chop them and add them to your blender (no need to peel them unless you want to). Peel the bananas and break them into the blender.

    Cut a 2cm-thick slice off the ginger and grate it into the blender (for a stronger ginger kick, grate in extra ginger). Add the cashews and 1 tsp mixed spice. Pour in 330ml oat drink and add a few ice cubes, then blitz till smooth. Pour into two glasses and dust with a little more mixed spice to serve.
