Brilliant Beetroot Boost

Ingredients you'll need
- 1 beetroot
- 1cm ginger
- A thumb of turmeric
- 1 mango
- 35g cashews
From your kitchen
- A cupful of ice
- 250ml water
Step by step this way

Scrub and coarsley grate the beetroot. Roughly chop the ginger and turmeric. Peel the mango and slice the flesh away from the stone. Roughly chop it.

Put all the fruit and veg into a blender with the cashews. Whizz with a large cup of ice and 250ml water till smooth. Add more water to reach your desired consistency.
- Tip
A nice long soak
If you have time, soak the cashews in water overnight. Drain, rinse and add to the blender with the rest of the fruit and spices. Soaking makes them easier to blend and may make them easier to digest.
