This striking smoothie is brimming with earthy beetroot, crisp apple and sweet carrot, whizzed together with tangy dried goji berries, a rich dash of coconut oil and a creamy splash of brown rice drink.

  • 1 beetroot
  • 2 carrots
  • 2 apples
  • 1 tbsp dried goji berries
  • 1 tbsp coconut oil
  • 330ml brown rice drink

Step by step this way

    Trim, scrub and roughly chop the beetroot and carrots. Quarter the apples and slice out the cores then roughly chop them. Add everything to the blender. Tip in the goji berries and coconut oil.

    Pour in 330ml brown rice drink (save the rest for this week’s other smoothies). Drop in a few ice cubes then blend till smooth. Pour into a couple of cold glasses and serve.
