Ingredients you'll need
  • 1 avocado
  • 500ml almond milk
  • 25g pumpkin seeds
  • A large handful of flat leaf parsley
  • 1 lemon

  • Cupful of ice
Step by step this way

    Halve your avocado and scoop the flesh out into your blender. Zest and juice the lemon and add to the blender with the pumpkin seeds and parsley. Pour in the almond milk and add a cupful of ice. Blend till smooth.

  • Tip

    Use the bananas in your box to help ripen your avocado if a little firm.
