- 50g butter, melted, plus extra for greasing
- 150g plain flour, plus extra for dusting
- 200g wholewheat plain flour
- 1 tsp bicarbonate of soda
- 200g apples
- A handful of chopped nuts and/or dried fruit (optional)
- 1 egg
- 2 tbsp honey
- 250ml apple juice

Method
1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Grease a loaf tin with butter, then dust the tin with a coating of plain flour – this will help stop the bread from sticking.
2. In a large mixing bowl, whisk together the flours, salt and bicarbonate of soda. Core the apples, then coarsely grate them. Fold the grated apple into the flour with any chopped nuts or dried fruit. If you're using nuts, reserve a few to sprinkle over the top.
3. In a separate bowl, whisk together 50g melted butter, the honey, egg and apple juice. Pour into to the dry ingredients. Gently fold all the ingredients together, being careful not to overmix.
4. Scoop the mix into the tin. Scatter any reserved nuts over the top. Bake for 30 mins, or till a knife inserted in the centre comes out clean.
5. Let the bread cool in the tin for 10-15 mins before turning out and serving. Delicious served buttered, or with mature cheddar cheese.
