This silky-smooth Jerusalem artichoke soup is topped with golden fried mushrooms tumbled with thyme. It's a luscious combination that shows how deliciously indulgent winter roots can be.

Ingredients

  • 1 onion
  • 1 carrot
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Sea salt
  • Freshly ground pepper
  • 400g Jerusalem artichokes
  • 1 vegetable stock cube
  • 750ml boiling water
  • 200g chestnut mushrooms
  • A handful of thyme, leaves only

Method

1. Fill and boil your kettle. Peel and finely chop the onion. Trim, peel and dice the carrot. Peel and crush or finely chop the garlic cloves.
2. Pour 1 tbsp oil into a pan and bring to a medium heat. Slide in the chopped onion, garlic and carrot along with a pinch of salt and pepper. Cook for 5-8 mins, stirring occasionally, till the veg start to soften and brown.
3. While the veg fry, rinse and peel the Jerusalem artichokes (but don’t worry about the odd bit of skin if they are a bit too knobbly to peel evenly). Chop into small chunks.
4. Add the artichokes to the pan and crumble in the stock cube. Pour in 750ml hot water from the kettle. Bring to the boil, then reduce to a simmer. Cover the pan with a lid and cook for 15-20 mins, till the Jerusalem artichokes are tender.
5. While the soup is cooking, thinly slice the mushrooms and pick the thyme leaves off their woody stalks.
6. Pour 1 tbsp oil into a frying pan and bring to a medium-high heat. Slide in the mushrooms, thyme and a pinch of salt and pepper. Fry for 4-5 mins, turning once or twice, till golden. Set aside with a lid on the pan to keep the mushrooms warm.
7. When the veg in the soup pan are very tender, use a stick blender to whizz the soup till smooth. No stick blender? Simply transfer the soup to a blender (in batches if needed) and blitz. Pour the soup back into the pan and taste. Add more salt or pepper if you think it needs it.
8. Ladle the soup into 2 warm bowls and top with the fried mushrooms. Crack over a little pepper and serve.

This is a fantastic taste and an easy recipe. It is the first time ever trying Jerusalem artichoke for me and I have converted immediately. A friend is also amazed with the recipe. I can also recommend using sage instead of thyme and adding a splash of lemon on your bowl to cut through the strong rustic taste if you like
